Many merchants claim that rice cookers use technologies such as rice-soup separation to reduce the sugar content in rice, thus helping a healthy diet. Some merchants claim that rice cookers can even reduce reducing sugar by 70%. Does the "sugar-free rice cooker" really have such a role? Recently, according to CCTV, the reporter once carried out an experimental measurement with a rice cooker. The conclusion shows that there is no difference in the blood sugar formed after the rice steamed by ordinary rice cookers and sugar-removed rice cookers enters the human body.

  Recently, products such as "sugar-free rice cookers" and "low-sugar rice cookers" are selling well online. Merchants said that these rice cookers can reduce the sugar content of rice and achieve the functions of "health preservation" and good health.

  On October 30, the reporter of Beiqing Daily searched and saw that the prices of different kinds of sugar-removed rice cookers were different, ranging from 200 yuan low to 1,900 yuan high. There are a variety of rice cookers with monthly sales of more than 1,000 sets, and some rice cookers have recently booked more than 9,000 copies.

  The publicity pages of several sugar-removed rice cookers show that this rice cooker uses the method of separating rice and soup to achieve the hypoglycemic effect. For example, a product promotion said that after the fire is boiled, some starch will be dissolved in rice grains, and after repeated washing, the dissolved starch will be filtered out, and the rice soup will be separated, and then the rice will be steamed at a constant temperature.

  Some merchants’ customer service said that the sugar-removed rice cooker produced by themselves can remove 30% of starch, and there are professional models that can remove 50% of starch. "It can effectively control the rise of blood sugar and maintain a low-sugar healthy living condition." A test report sent by the merchant shows that the total sugar content of low-sugar rice is 0.15g/100g, and that of ordinary rice is 0.34 g/100 g. At the same time, the customer service said that it is impossible for some merchants in the market to claim that the starch removal rate of rice cookers is 70%.

  The customer service staff of another shop said that their rice cooker can "remove sugar" by 71%, but the customer service said that there is no test report yet and offline testing is supported.

  There is actually no difference in blood sugar.

  Does the sugar-removing rice cooker really have magical effect? Recently, CCTV reporters bought a "smart hypoglycemic pot" and brought it to Beijing Institute of Nutrition Sources for experiments. According to CCTV news client news, experts refer to the latest industry standard "Determination Method of Food Glycemic Index" issued by China at the end of 2019, and conduct a "double-blind" measurement on the changes of human blood sugar after eating the rice steamed from sugar-free rice cookers and ordinary rice cookers.

  In the experiment, the same brand and weight of rice, as well as the same amount of water, were made into rice in the ordinary rice cooker and the "intelligent hypoglycemic pot" respectively. Twelve healthy volunteers took part in the experiment, and their fasting blood glucose was tested twice. At the same time, men and women were divided into two groups, one group ate ordinary rice and the other group ate "sugar-free rice", and each person ate 150 grams.

  Within two hours after meals, blood samples were taken from volunteers at six time points to detect blood sugar content. By comprehensively calculating the postprandial blood glucose data of each volunteer, two human blood glucose curves are obtained.

  Chang Jingyi, a member of the expert database of "Source News" of China Association for Science and Technology and the technical director of GI Testing Center of Beijing Institute of Nutrition Sources, said that the highest vertex of ordinary rice cookers is 8.79, and that of sugar-removed rice cookers is 8.56, but there is no significant difference in statistics. "After the rice steamed by two rice cookers enters the human body, there is actually no difference in blood sugar." That is to say, the same amount of rice is converted into almost the same amount of blood sugar after being absorbed by the human body, and the sugar-removing rice cooker has not played the role of "sugar-removing" rice, and it is even more impossible for some sellers to claim that the blood sugar reduction rate reaches 70%.

  Chang Jingyi said that there will be 90% carbohydrates in rice, 75% of which are starch. After being dissolved in water, some starch may enter the water, but the amount will be too small to affect it (blood sugar).

  According to the news released by WeChat official account on December 4, 2019, they found 12 healthy adults, tested their blood sugar twice from an empty stomach, ate food containing 50g carbohydrate or 50g glucose, and collected fingertip blood six times after 15, 30, 45, 60, 90 and 120 minutes. The evaluation shows that the blood sugar does rise slowly after eating sugar-free white rice, and then it drops slowly. In addition, according to the calculated glycemic index (GI value), the GI of sugar-free white rice is two points higher than that of ordinary white rice.

  The reporter of Beiqing Daily learned from the Consumer Rights Protection Network of Guangdong Consumer Council that in July this year, the Guangdong Consumer Council issued a consumption reminder for "low-sugar" rice cookers. According to the introduction of the Consumer Council, the questionnaire survey shows that among the 137 respondents, 85.4% have never used the "low-sugar" rice cooker product, but 66.43% are optimistic about its market prospect, 76.64% value whether the cooked rice is delicious, and 95.62% are willing to try it on the premise of determining the product effect.

  From March to July this year, the Consumer Council of Guangdong Province, in conjunction with the Consumer Council of Foshan City, commissioned a third-party testing agency to carry out the commodity comparison test of "low-sugar" rice cookers. From the comparative test results, in terms of functional effect, compared with ordinary rice, the reducing sugar content of 18 samples of 20 samples cooked in low-sugar stalls decreased to varying degrees, while the resistant starch content increased to varying degrees, indicating that most samples of "low-sugar" rice cookers had a certain functional effect of "reducing the sugar content of rice". However, it is worth noting that the experiment does not involve the changes of blood sugar after consumers actually eat the rice cooked by the "low-sugar" rice cooker, that is, although the "low-sugar" rice cooker can reduce the reducing sugar content of rice and increase the resistant starch content in different degrees, it does not mean that eating the "low-sugar" rice directly reduces the blood sugar content of human body. The Consumer Council reminds that eating "low-sugar" rice cannot be used as the main way to lower blood sugar, especially it cannot replace the role of related drugs.

  At the same time, the Consumer Council said that this comparative experiment found that the promotion of the function of low-sugar rice cookers on "lowering blood sugar" was easily misleading, which made consumers mistakenly think that the product had the function of "lowering blood sugar". At the same time, there are still some problems in the promotion, such as the unclear functional indicators and reference objects claimed by this kind of products, and the inconsistency between the claimed effects of most samples and the test results. Therefore, consumers should correctly view the advertising of products. Before buying, they can ask the shopping guide whether there is a technical appraisal report on the function and effect of the products. If the claimed hypoglycemic rate of the products is as high as 60% or above, and there is no appraisal report or certificate from a third-party testing organization for technical support, it is recommended to buy carefully. If the product claims to reduce the starch rate, it has little correlation with the actual core indicators of hypoglycemic effect, and it is also recommended to consider buying it carefully.

  The Consumer Council reminds consumers that before purchasing "low-sugar" rice cookers, they must check whether the products they buy have "CCC" certification mark, product instruction manual and warranty card. According to the Consumer Council, in view of the fact that "low-sugar" rice cookers are new functional electrical appliances and the industry is still developing, consumers are advised to pay more attention to and know more about the industry development and product quality before buying. At the same time, in order to avoid buying inferior products and it is difficult to protect rights later, we should try to buy them in formal channels. When buying, we should pay attention to the quality of goods and experience, and don’t unilaterally pursue low prices.

According to Gu Zhongyi, this kind of rice cooker does not lose carbohydrates in rice after use, nor does it lose any easy-to-absorb simple sugar, but only reduces some simple sugar, and some starch is converted into resistant starch that is not decomposed by amylase. According to the experiment of Guangdong Consumer Council, the content of reducing sugar has decreased to varying degrees, while the content of resistant starch has increased to varying degrees, so it can be done from the perspective of component content.

  Gu Zhongyi said that although it is useful in theory, it depends on the impact. Relevant clinical trials suggest that taking 50 grams of resistant starch within 24 hours may reduce postprandial insulin response, or that resistant starch accounts for more than 14% of starch, which also has obvious effect. Different products have different effects, so it is not easy to generalize. From the previous research on rice processing, it is possible to reduce the glycemic index of rice from 90 to 50 after increasing the resistant starch, and it is possible to increase the proportion of resistant starch to more than 40% of the total starch.

  Many rice cookers use rice-water separation to reduce sugar content, but Gu Zhongyi said that it is not a pity to wash off starch, but there are some polyphenols, vitamin B family, vitamin E and so on in aleurone layer, especially vitamin B is easy to be lost. If you still want to use this rice cooker for a long time, it is recommended to take a compound vitamin mineral supplement or vitamin B group.

  For some people with high blood sugar or those who want to control sugar, Gu Zhongyi suggested that considering everyone’s acceptance and eating habits, in fact, if you eat two or two rice in a meal, there will be no serious consequences. If possible, brown rice can be used instead of white rice, or mixed with miscellaneous grains and whole grains is a good choice.
